Chilli & Lemongrass Chicken Nuggets and Healthy Fries

ADD2 Chicken Nuggets and Fries

A healthy, low calorie, low fat option for those looking for a sin free option. Any of the ADD2 range can be used for your particular taste but here we use Chilli & Lemongrass for a spicy, uplifting option. Served with oven baked fries and a side of salad and lighter than light mayo this makes this an all-year round favourite with the kids and adults alike. Meat substitutes can be used as a veggie option - use a water and cornflour mix to get your breadcrumbs to stick!

Ingredients - serves 4

4 Wholemeal round rolls - dried out for a couple of days (leave out of the packet)

2 eggs

3 Chicken Breasts - skin off

1 packet of ADD2 Chilli & Lemongrass

3 Large jacket potatoes (unpeeled)

Spray Lite oil

Salt to Taste

Method

Pre heat the oven to 180degreesC Gas mark 4. Cut your potatoes into fries-long shapes about the size of your little finger (remember to keep your finger attached to the rest of your hand). Lay a piece of baking paper over a baking tray and spray with oil to prevent sticking. Spray the fries with oil, salt to taste and lay over the baking tray. These go in 5 minutes before the chicken nuggets.

Break up the rolls into large chunks an whizz in a food processor until you have coarse breadcrumbs - place in a dish. and thoroughly mix in the packet of ADD2 Chilli & Lemongrass.

Break to eggs into a dish and give a quick whisk with a fork to break up the yolk.

Cut the chicken into nugget size about 2cm. Coat each one in the egg then roll in the breadcrumbs until well coated. Place on an oiled baking tray and give each one a little spray of oil each.

Cook the fries for 35 minutes and the nuggets for 30 or until golden brown - check one to makes sure the meat appears white inside.

Serve with lighter than light mayo and the salad of your choice.

Any breadcrumbs left over can be frozen and re-used.
