Using P&D BBQ Rub
Hunters Chicken (Using P&D Barbecue Rub)
Dead simple but dead effective. Whilst eating out, this is a meal I’ve had a few times in the hope that it would be done better the next time I ate it. To no avail. So I’ve used our BBQ rub to get the desired taste which should be full on BBQ taste. I have boned and rolled a whole chicken (which your butcher can do) but it’s fine to use chicken breasts. Leave the skin on for the roasting to get the juices infusing with the rub but discard for serving if you so wish.
1.5kg Chicken – Boned and Rolled – or 4 Chicken Breasts
1 Packet P&D BBQ Rub
Bottle of decent BBQ sauce
4 Slices thick Smoked Bacon (1 per person)
Grated Red Leicester Cheese (as much or as little as you like)
1 Roasting Bag
Sliced Pineapple Ring (optional)
Pre-heat the oven to 180°C – Gas mark 4-5
Rub the chicken with the contents of the P&D BBQ Rub and place into the roasting bag, following the instructions. Place the bag of rubbed chicken into a roasting pan and then into the centre of the oven and cook for 90 mins for a rolled chicken and 45 mins for chicken breasts (make sure the meat is cooked through thoroughly).
Whilst the chicken is in the oven, fry the bacon slices in a large frying pan and set aside.
When the chicken is done remove the chicken from the bag – retain the juices in the bag.
Separate into 4 portions and place the chicken into the pan with the bacon in. Drizzle the top of the chicken with the BBQ sauce, place the slices of bacon onto each portion and then cover with the cheese. Place the pan under a hot grill to melt.
Once melted serve with fries/thick cut chips, onion rings, peas and a slice of fried pineapple (optional) – drizzle the juice from the bag over the chicken. Yum.
