Chorizo Spiced Stuffed Pepper

Using P&D Chorizo Oils

A lighter bite for a late evening meal after a hard day at the office or building site or wherever you work. Dead easy and with a bit of a kick.

Serves 4


2 large red peppers - halved and de-seeded

4 cloves of Garlic - finely chopped

8 cherry tomatoes - halved

4 fresh basil leaves - torn

2 Tbsp Hard Italian Cheese (parmesan etc - not too important)

4 Tbsp P&D Chorizo HOT

1 Tbsp P&D Chorizo

Tub of soft cream cheese


Pre-heat the oven to 180°C - Gas Mark 4-5

Equally divide the tomatoes, garlic, basil leaves and one Tbsp of Chorizo HOT and place into each half of the pepper. Seal the top of each pepper with the soft cream cheese. Sprinkle the hard cheese equally over the pepper halves and drizzle the P&D chorizo oil on top of the hard cheese. Onto a baking tray it goes - ensure that they wont fall over! Bake for 30 - 35 mins. Serve with a glass of Red and the salad of your choice.
