Sopa Trabajador

Using P&D Chorizo HOT Oil

The translation means "workers soup". A substantial soup with a spicy bite best served outdoors, in the sun with a glass of Red or hearty enough for those cold winter months

Serves 4

250g Chicken finely diced

400g Tin of Chopped Tomatoes

Tin of Red Kidney beans

1 Medium Onion

1 Red Pepper

2Tbsp P&D Chorizo HOT

3 Chicken Oxo Cubes

Half Pint of Water

In a large pan heat the Chorizo oil and fry the chicken until just cooked. Add the onion and the pepper and cook for another 3 minutes. Add the tin of tomatoes and the kidney beans. Crumble the Oxo cubes over the mix and add the water. Bring to the boil and reduce the heat. Simmer for 20 mins until the “sopa” has reduced to a sauce. Serve.

Better still……..Top it!

Cut 2 slices of white bread into small cubes, add 2 Tbsp of P&D Chorizo to a small frying pan heat and cook the bread making sure it absorbs the oil. Be careful not to burn the bread! Couple of mins maximum at a medium heat. Once the Sopa is dished into a bowl grate the top of the dish with mild grated cheddar cheese and blast in the microwave for 1 minute – Break the bread over the top and serve.
