Using P&D Chorizo HOT Oil
This is the classic Tapas dish that most people know. Chorizo HOT makes gives the sauce spice and taste whilst the Chorizo adds taste as the potatoes roast. It's quick and easy and makes an impressive starter also.
Tin Chopped Tomatoes – 400g
2 Tbsp P&D Chorizo HOT oil
2 Tbsp P&D Chorizo oil
5 Cloves Garlic – finely chopped
1 Chicken Stock cube
1 tsp Crushed fennel seeds/Powder
1/2 tsp Five Spice Powder
1tsp mild chilli powder
1 tsp smoked paprika
1 tbsp Tomato Puree
1 Large baking potato per person
Preheat the oven to 180°C or Gas Mark 5. Chop the potoatoes into 1cm cubes, pour the P&D Chorizo Oil into a roasting tray and coat the potatoes in the oil. Place in the oven for 45-50 mins until golden brown. Whilst this is all happening, pour the P&D Chorizo HOT into a medium saucepan and fry the onion for 3 mins over a low heat then add the garlic and fry for a further 2 mins. Add the rest of the ingredients and bring to the boil and immediately lower the heat to a very gentle simmer. Stir for another 5 mins and turn off the heat until the potatoes are done. Serve with an individual simple lettuce, tomato and cucumber salad on the side of the plate.
